So it isn’t a great surprise that when the Ritz-Carlton, Hong Kong decided to pursue their own version of a chef’s table it surpasses the ordinary chef’s table experience on offer around the world. When you dine at the Chef’s Table on Level 102 at The Ritz-Carlton, Hong Kong you will not just be sitting behind a glass wall to observe the culinary activity for the evening as you would be at any other chef’s table dining experience. This one-of-a-kind Chef’s Table will guarantee its guests not only front-row seats to experience the vibrancy of its kitchen but also the luxury of dining in a private enclave.
Starting from February 2017, this Chef’s Table’s signature menus will spotlight one specific country at a time. With menus ranging across the globe, from east to west, with a special focus on regional dishes enhanced by playful and modern touches of its Executive Chef Peter Find and his culinary experts in the kitchen.
Chef Peter Find started his training and apprenticeship in a French-influenced restaurant in Germany in 1984. He then worked in a number of Michelin-starred restaurants in Europe for about ten years. Since joining the The Ritz-Carlton brand, he has worked in its hotels in Singapore and Bahrain before taking up the position of Executive Chef at The Ritz-Carlton, Hong Kong. At The Ritz-Carlton, Hong Kong, Chef Perter oversees 6 restaurants and a team of over 100 chefs. He is responsible for the planning and directing of the culinary operations in the hotel.
As Chef Peter Find is German-born, Germany is naturally the first choice to kick-start the new series of menus. This Chef’s Table’s masterfully designed six-course menu stays true to the original flavors of authentic German cuisine where Chef Peter takes an avant-garde approach to refining the cooking techniques and food presentation.
In a nutshell, the highly anticipated German Menu at the Chef’s Table at The Ritz-Carlton, Hong Kong for February 2017 is as follows. Its appetizer –pork skin, currywurst with parsley- is a lighter and airier version of the traditional German snack. The second course, Brown Shrimp Salad is accompanied by seven herbs and the robust flavor of pumpernickel rye bread. The third course on the menu is Pork Pâté with Herring Fish and Granny Smith Apple which consists of alternate layers of pork pâté, vinegar-marinated herring fish and honeyed green apple slices beautifully arranged in a mille-feuille terrine. The fourth course is – Koenigsberger, Klops, and Capers- inspired by traditional, German home-style meatballs. This savory dish is toned down by the tangy flavor of capers in a palate-pleasing cream sauce. The fifth course is German Schwabentopf and Cherry. Here the pork meat is stuffed with a generous portion of Emmental cheese sticks and marinated with paprika before being briefly pan-fried and slow-cooked over low heat. With a stylish dark charcoal coating, this enticing main course is served with corn puree and brandy-infused cherry to resemble the national flag of Germany.
The unique dinner experience at the Chef’s Table at The Ritz-Carlton, Hong Kong includes Chef Peter and his team attending to that table exclusively throughout the evening and guiding guests through each course. “The idea of a Chef’s Table is to present guests with an insider’s pass into the world of cooking. Guests will be able to see and experience the work and secrets that go into crafting the dishes we serve,” says Find, “Through the dishes that we have prepared, we hope to share with the guests our passion for and the refinement of the culinary arts.”
This progressive culinary and dining experience is available for a maximum of eight guests and at a minimum spending of HK$16,000 + 10% (HK$2,000 + 10% per person). The hotel sommelier will also share his expert recommendations of wines to pair with the menu.
