Created by non-other than England’s baker to the stars Georgia Green, each Reindeer Tart come topped with an ethically sourced Ruby from Sri Lanka. Between Georgia and I, not sure which one of us love Sri Lanka more. Last year she used Ceylon Cinnamon to create the beautiful Gingerbread House for VeryFirstTo and this time around it is Sri Lanka rubies. Just like the diamond on the Christmas Tree Star, ruby can be set into a piece of jewelry.
Delightful little tarts with a chocolate ganache sweet pastry are filled with salted caramel, and each red ruby sits on a delicious macaron. Georgia used caramel to make antlers and then piped them into shape.
“I have been asked to bake some unusual tarts in my time – but nothing quite as remarkable as this. Whilst I’m sure the ruby will be remembered, I trust that the wonderful blend of ingredients will also leave a long-lasting impression on the palate,” Georgia said.
