There is macaron Christmas tree in Charlotte at the Ritz-Carlton and there is one in Hong Kong at the Landmark Mandarin Oriental. The one at Ritz-Carlton is multi-colored and the one at Mandarin Oriental is all silver. We have a French macaron madness!
Made with edible and colorful 8,000 sweet French macarons, it took Ritz-Carlton’s pastry team 58-hours of nonstop work to put together the tree. Second, only to Mandarin Oriental’s almost ten-foot tree, the eight-foot tall macaron tree will be on display until December 29 in the hotel lobby. A garland of delicious macarons encircles the tree resembling a line of Christmas lights.
It took Jon Farace, hotel’s Executive Assistant Manager of Food and Beverage and Culinary, and his team six months to plan and bring this project to life. The macaron tree ingredient list included 10,008 egg whites, 57 cups of powdered sugar, 57 cups of sugar, 57 cups of almond flour and 15 cups of water. Mixing them was no small task at all.
Complementing the mostly red and green handcrafted macaron tree is a delicious all-sugar, candy-cane showpiece sleigh, pulled by a team of all-chocolate reindeer. Bar Cocoa dessert boutique at the hotel offers a collection of mouthwatering seasonal confections, sweets, and pastries. A series of Holiday Afternoon Teas are also on offer on selected days.
