Mandarin Oriental Hotel Group has joined hands with Cathay Pacific Airways to create exclusive menus for airline’s first class passengers travelling between Hong Kong and London from September to December this year. The exceptional “inflight menus” are offered in two segments, the first starts in September for the Hong Kong and London sector, while the second London and Hong Kong sector starts in November. Menus are created by Mandarin Oriental’s two top chefs Uwe Opocensky, Michelin-starred Executive Chef at Mandarin Oriental, Hong Kong and Dean Yasharian, Executive Chef at the acclaimed Bar Boulud at Mandarin Oriental Hyde Park, London.
Chef Opocensky’s creations will be served from 1 September to 31 October 2014 on flights from Hong Kong to London. His menus will feature sumptuous appetizers such as a terrine of foie gras with winter truffle, asparagus with freshly toasted brioche, and home-smoked salmon with crabmeat and caviar. Main courses include organic beef from the award-winning Brandt Farm in the US, a combination of celeriac puree and truffle jus for September, and juicy organic chicken partnered by a wing bone foie gras for October. Mouthwatering desserts include lemon tart for September and banana split for October.
First class passengers of London to Hong Kong flights between 1 November and 31 December gets to enjoy menus created by chef Yasharian. His creations consist of traditional British pub-fare such as fresh Dorset crab and duck liver terrine. His main courses include British-origin beef, slowly braised in a rich red wine sauce and complemented by a smooth puree of parsnips, and fillets of lemon sole enriched with a buttery but subtle Grenoble sauce. Delicious dessert creations comprise of a tart raspberry filling baked in crisp filo pastry, perfectly balanced with sweet milk ice cream, and a chocolate dome with a deliciously rich coffee center.
