Fall officially starts today, that also means fall flavors pears and chestnuts are back on the menu. It is afternoon tea bonanza time for fans in the Far East. As announced yesterday by Ritz-Carlton, Hong Kong, they have teamed up once again with the world famous macaron boutique Pierre Hermé Paris for another delicious creation of afternoon tea. The chestnut and pear inspired Pierre Hermé Paris Hommage Afternoon Tea Collection will cater to desert devotees between October 1 and November 30 at Café 103.
Through this seasonal afternoon tea collection, Pierre Hermé is paying tribute to his mentor Gaston Lenôtre (one of the main inspirations for the character Gusteau in the animation film Ratatouille.) For Pierre, the fall’s favorite flavors take him back to his youth, he still loves the smooth, fruity flavors of the chestnut-pear ice cream.
Executive Pastry Chefs Takuro Osawa of Pierre Hermé Paris and Richard Long of The Ritz-Carlton, Hong Kong, worked together to create the mouthwatering menu. And they made sure anyone with a sweet tooth going to enjoy their labors.
Patrons will treat themselves to six pastry creations from the Hommage collection. First in line is the Macaron Infiniment Poire in which pear cream and dried pear pieces take the center stage between macaron biscuits. Next up is Macaron Infiniment Marron Glacé – my fellow macarons in simple English, a tasty macaron with candied chestnut cream and dried chestnut pieces. Next up – they combined chestnut and milk chocolate to make a smooth ganache, then added some pear fruit paste to create Bonbon Chocolate Hommage.
Mont-Blanc Hommage is a new spin to the classic French desert with flavor medley – pear almond cream, meringue, chestnut Chantilly cream, and pear compote in a shortbread pastry. This would be my favorite – the Chou Hommage, a light pastry shell filled with soft and creamy chestnut Chantilly cream, fresh pear and pear compote. Moving on to the final item, the Emotion Hommage. A glass full of flavors that include pear compote, pan-fried chestnut, soft cake, and chestnut Chantilly cream.
Don’t worry there is something for savory lovers too. A mini soft bun filled with sweet corn and chicken salad decorated with rocket leaf. A sandwich for seafood fans – blue crabmeat with butternut and parsley between slices of Waldkorn (Black Forest) Bread. The final item, a gingerbread sandwich filled with semi-dried tomato and chestnut cream cheese.
This is afternoon tea, so they obviously offer teas and coffees to fit every guest’s taste. Champagnes and other drinks are available on request for an additional charge.
