Ritz-Carlton, Hong Kong makes eye-catching food – going by the images that accompany their press releases (don’t know if that is the case in real life). That said, we have a new eye-catching and mouthwatering afternoon tea to introduce to. Starting July 1 and thru August 31, Café 103 will be serving a Tropical Afternoon Tea set designed by Chef Franck Michel – the winner of Meilleur Ouvrier de France (Best Artisan of France Pastry Chef) and World Pastry Champion – featuring seasonal tropical fruits.
Chef Michel has been around a while and traveling around the world creating delightful pastries. He started at Mr. Saffroy in the Lorraine region of France and in Luxembourg, he was Head Pastry Chef at Relais Dessert International. He moved to Paris to join Flo Prestige, where he got to develop his own patisserie range. His other work includes doing pastry consultancy work and coaching national pastry teams (French and Spanish) for the World Pastry Cup.
Menu items on the summer afternoon tea include Sawayaka Verrine and Passion Choux – a soft and airy pastry filled with silky-smooth vanilla cream covering a glass with tropical fruit compote highlighting the cleverly blended sweetness of pineapple, mango, banana, and lime. The choux is garnished with mango and passion fruit coulis on top to offer a pleasing abundance of textures.
Almond Apricot Dome promises to be a pleasant surprise for every sweet tooth. The cake body is composed of a rich creamy almond mousse covered with a crispy white chocolate coating. It is adorned with dome-shaped apricot compote, presenting an adorable confectionery perfect for a mid-day fix.
Lili Melting Heart is a half-sphere chocolate filled with tropical fruit caramel featuring a mix of passion fruit, mango, coconut and guava puree. The dessert is beautifully arranged on flower-shaped sweet dough to melt any heart.
Heméra Frame is a buttery shortbread coated with moist almond lemon dacquoise, lemon confit, strawberry coulis, a generous spread of refreshing white chocolate mousse and olive oil jelly – all offering a soothing balance of flavors.
For those who favor savories – they serve few savory items including a finger sandwich and a sesame black bun slider. As always tea and coffee are part of the menu. Check out the pricing and reservation details below.
