Tosca is celebrating the white truffle season with a new afternoon tea they introduced last month, the White Truffle Afternoon Tea. As food enthusiasts know, the sought after white truffle is famous for its earthy and subtle aroma. With Italian white truffle season in full flow, this is the best time to introduce new culinary experiences. Ritz-Carlton, Hong Kong’s Executive Pastry Chef Richard Long has teamed-up with Tosca’s Michelin-starred Chef Pino Lavarra to bring truffle afternoon tea, available exclusively on Saturdays till December 19, 2015.
Among the items is a small-bite version of the classic “Burrata Cheese Risotto”. Chef Lavarra’s creation with flavorful white truffle shavings and aromatic profile of the risotto is a perfect addition to the afternoon tea. Pastry Chef Richard Long’s truffle experiments helped him create a couple of mouthwatering desserts. His personal favorite is “Topinambur Ice Cream” with Jerusalem artichoke enhancing flavor and white truffle shavings added to create its distinct aroma. A French baby pear is the base for “Hazelnut Nougat Cream, Meringue”. Poached in red wine, its winter flavors chestnut cream, crispy nougat chips and hazelnut cream are ready to bring holiday cheer to Tosca’s guests.
The White Truffle Afternoon Tea is priced HK$580 (about $75) per person and HK$1,088 (about $140) for two persons. Available from 3.30pm to 5.30pm on Saturdays.
Tosca’s famous Sunday Brunch also offer their own version of white truffle feast “Your Very Own Whole White Truffle”. Guests attending the brunch can get a whole white truffle piece shaved to their favorite dishes from the buffet spread. Available on Sundays from 11am to 3pm.
